Potatoes O'Brien

A quick and easy recipe from Better Homes and Gardens Magazine, June 1949. A very simple side dish that used up my leftover potatoes. And... all the vegetables came from our Victory garden. We actually ate it for breakfast this morning topped with fresh poached eggs laid by our girls

A very tasty way to start the day
2 cups cooked, chopped potatoes, 
1/4 cup of chopped green pepper, 
1/4 cup onion and 
1 tablespoon diced pimiento
  • Combine potatoes, green pepper. onion and pimiento
  • In a heavy skillet melt Crisco about 1/4' deep until hot
  • Fry vegetables until golden brown
