Then.. if I have time.. the front widows need a bit of a clean. The lack of rain is leaving everything very dusty and I realized yesterday that you could probably write your name on the outside sills.. Not good
Todays recipe is for Spanish Pork Chops from The Modern Family Cookbook by Meta Givens 1943. Although... its another recipe where Im confused why its called Spanish.
There are absolutely no seasonings in it except for salt and pepper. This means the dish is a little bland. But a couple of garlic cloves and two teaspoons of paprika helped no end. I served it with a green salad.. and some jalapeno bread...courtesy of our lovely next door neighbour
5 thick pork chops (1 1/2 lbs.)
1 Tbsp fat
1 onion, sliced
2 cups tomatoes
1 tsp salt
1/2 tsp pepper
3 Tbsp flour
3 to 4 cups boiled rice

- Brown chops on both sides in the fat in a hot skillet
- Remove chops from pan.
- Brown onions in same pan
- Add chops, tomatoes, and seasonings.
- Cover, and simmer 30 to 40 minutes.
- Remove meat
- Thicken the tomato mixture with the flour mixed to a smooth paste with 1/4 cup cold water
- Boil 2 to 3 minutes, stirring constantly.
- Place rice in center of platter
- Arrange chops around rice
- Pour tomato sauce over all.
- 5 servings.
