Creamed Turkey in Potato Nests

MrD and I didnt quite make it to midnight.. which is pretty normal these days. But we wish all our family and friends a very happy and peaceful year
And with the new year... there comes a little change to the way I cook and choose my recipes. This years dates and days align perfectly with 1942.. so my aim will be to use recipes from that year and before.  Both the Uk and US were at war... though rationing was different... but I hope to be ration friendly for both sides of the Atlantic.
So this is a good recipe to start the year with. Using the leftover turkey.. and potatoes from Christmas Day I made Creamed Turkey in Potato Nests from Better Homes and Gardens Magazine,  December 1940

They were really tasty.. and a very quick and easy way of using leftovers although I did make a slight change to the recipe... I left out the egg. I just didn't fancy it. And I halved the milk. The flavour was still good.. but I couldnt say what it would taste like with it
1 can condensed cream of mushroom soup (10½ ounces)
1½ cups diced, cooked turkey
½ cup chopped canned pimiento
½ cup top milk
1 egg yolk
Original Magazine Recipe
  • Blend the condensed soup and the top milk together in a saucepan.
  • Place the mixture over heat.
  • Stir in the diced turkey and chopped pimiento.
  • Take a small amount of the hot sauce mixture and gradually stir it into the egg yolk to warm it (this prevents the yolk from scrambling).
  • Stir the tempered egg yolk mixture into the remaining hot sauce.
  • Heat the entire mixture thoroughly until it is hot and slightly thickened.
  • Serve the creamed turkey dish immediately in individual "nests" made of fluffy mashed potatoes.
