Happy Tuesday Lovelies
So the Christmas tree is decorated and the whole house feels beautifully festive. We had to put the lights on just to make sure they work..(there's always that one bulb!!!) but all the lights will be going on formally tomorrow
I think that the kitchen curtains look a bit drab so I’ve dug through my Christmas fabric stash and found enough material to make some new ones.. which I will do at the weekend
The weather is quite cold.. so it’s a surprise to see roses still blooming in the garden. I’m not sure how long that will last
For dinner we each had a bowl of Chili Con Carne Such a simple recipe and I made it just a little spicier this time.. just to warm us up on a cold day. Plus there’s plenty left over for another dayI served it with these very simple Cheese Rings from the July 1940 edition of the Australian Women’s Weekly.
Their texture was almost like a scone/biscuit and the cayenne gave them a bit of a kick. The recipe.. for me.. only made four.. with a bit left over to give hubby a sample before dinner. Plus I left them in the oven for a bit longer than stated.. 15 minutes…

All in all not too bad.. and I would probably consider making them again.
3oz flour
Pinch of baking powder
Salt to taste
Cayenne pepper to taste
2 oz. grated cheese (divided)
1 oz. butter
1 egg yolk
Squeeze of lemon juice
1 tbsp water (approximate)
White of egg (leftover from the separated egg)
Remaining grated cheese
Salt to taste

- Preheat your oven to 400°F (200°C).
- Sift the flour, pinch of baking powder, salt, and cayenne pepper into a bowl
- Rub the butter into the dry ingredients until the mixture resembles fine breadcrumbs
- Stir in half of the grated cheese
- In a separate small bowl, beat the egg yolk, lemon juice, and 1 tablespoon of water
- Add the wet mixture to the dry ingredients
- Mix well to form a stiff dough
- Add a splash more water if the dough is too dry
- Roll out the dough and cut it into rounds
- Use a smaller cutter (like a piping tip) to remove the center, leaving rings
- Brush the rings lightly with the reserved egg white
- Sprinkle generously with the remaining grated cheese
- Place the rings on a baking sheet
- Cook in the hot oven (400°F) for approximately 10 minutes, or until golden brown and puffed
- Let cool slightly before serving
