After the housework was done... and I must admit it was done quite quickly today.. I spent the afternoon making cookies for the Senior Citizen Centre's Christmas Coffee Morning. If I have time tomorrow I will make some mince pies too
So the recipe I made was Chocolate Circles from "The Cookie Book ~ 250 Recipes" from the Culinary Arts Institute 1941. Actually... as you can see... I didnt make circles...but stars... and I made them into sandwich cookies. As with most rolled cookies... they are very versatile and can be cut into any shape. And I decided to sandwich them together with an assortment of fillings...chocolate spread... peanut butter and strawberry jam
They were a complete winner, For such little chocolate in the recipe... the flavour was just right. I sprinkled a little powdered sugar on top for a festive feel... but he family loved them and I will be making them again
1 cup sugar
1 egg, beaten
1/4 cup milk
2 ounces chocolate, melted
2 1/2 cups cake flour
1/2 teaspoon salt
2 teaspoons baking powder
- Soften butter and cream with sugar.
- Add beaten egg and milk and the melted chocolate.
- Mix and sift the dry ingredients and add.
- Chill.
- Roll out 1/8 inch thick.
- Cut in circles (or in my case stars... with a small circle pressed into the centre of half of them)
- Bake in a moderate oven (350°F.) for 8-12 minutes
- Leave to completely cool before sandwiching together with chosen filling
